Tequila Peaches (for pie or galette)
1 ½ tablespoons tequila
1 tablespoon fresh lime juice
½ teaspoon lime zest
1 tablespoon cornstarch
2 large peaches, ripe and fragrant
2 tablespoons sugar
1 tablespoons cream
Combine the tequila, lime juice and cornstarch in a small bowl. Slice the peaches about ¼” thin. In a medium bowl add the peaches and the juice/cornstarch mixture. Using your hands, toss to combine.
oh my god, that makes two of us. my dinner has been peaches and i’m serisouly considering of getting another. i swear, i don’t know what’s going on but hey, at least it’s healthy!
Peaches galore! And I must say, the second shot is especially pleasing–with the focus on the board, and then with that yellow knife playing off the yellow of the lemon in the background. Just pure delight.
Yum. While i was on holiday – we cut some peaches in half, removed the pit, barbecued the peaces for just a few minutes then covered them in Greek yogurt a drizzle of honey and chopped roasted almonds. Divine!
i’ve been dreaming of peach ice cream. it used to not feel like summer in the south without it. i do have a friend who has a peach tree in VT. i’m hoping for a little stash.
I’m so jealous you have peaces already. In Ontario, Canada we get some of the best peaches from the Niagara Escarpment. I’m dreaming of peach juice dripping down my chin. PS The cream and sugar at the end are for whatever crust you use – just brush on and go!
